Rainbow Carrots and Parsnips with Sous Vide

Add some color to your meals; we will show you how! This recipe will show you how to cook rainbow carrots with parsnips using sous vide. Use the Avalon Bay Sous Vide Circulator or the Avalon Bay Sous Vide Water Oven.

Ingredients:

  • 1/4 lb Rainbow or regular carrots (cleaned and sliced)
  • 1 Tbsp. Olive oil
  • 1 tsp thyme
  • 1 tsp of salt
  • 1/4 tsp black pepper

Preparation:

  1. Slice carrots and parsnips and place into one gallon size plastic storage bag and remove as much air as possible
  2. Add the olive oil, thyme, salt and black pepper in the plastic storage bag
  3. Let sit at room temperature for 30 minutes
  4. While the carrots and parsnips are resting, set your sous vide station up and set to 180°F
  5. Place the carrots and parsnips into your sous vide container for 1 hour
  6. Take the carrots and parsnips out of the liquid and let rest, still in the plastic storage bags
  7. Turn a skillet on high heat with some oil in the pan
  8. Sear the carrots and parsnips off so that they have a beautiful brown sear on them
  9. Serve
