Brussels Sprouts with Bacon with Sous Vide

This classic dish offers a very healthy and nutritious option. The earthiness of the sprouts is matched perfectly by the crispiness and smokiness of the bacon. It is an ideal dish for a cozy night in front of the fire with loved ones. It’s also perfect for the Christmas dinner table!

Sous vide makes everything better, just like bacon! The simple recipe below shows you how to cook Brussels sprouts with bacon. Use the Avalon Bay Sous Vide Circulator or the Avalon Bay Sous Vide Water Oven to make the flavors pop.

Ingredients:

  • 1lb of Brussels sprouts (cleaned)
  • 1 Tbsp bacon fat
  • 2 garlic cloves, minced
  • 2-3 slices of bacon (cooked)
  • 1 tsp of salt
  • 1/4 tsp black pepper

Preparation:

  1. Cook the bacon strips and set aside. Save the bacon fat for the dish
  2. Cut the Brussels sprouts in half and place in a plastic storage bag
  3. Add the garlic, bacon fat, salt and black pepper in the plastic storage bag
  4. Let sit at room temperature for 30 minutes
  5. While the Brussels sprouts are resting, set your sous vide station up and set to 180°F
  6. Place the Brussels sprouts into your sous vide container for 1 hour
  7. Take the Brussels sprouts out of the liquid and let rest still in the plastic storage bags
  8. Turn a skillet on high heat with some oil in the pan
  9. Sear the Brussels sprouts off so that they have a beautiful brown sear on them
  10. Chop bacon into thin slices a little bigger than a matchstick
  11. Toss bacon in with the Brussels sprouts and serve
